That is because we are going to use oil and high heat to cook Chinese recipes including meat and vegetables. A shallow frying pan may not cover the grease and oil well. Sometimes, it can get very dangerous if the oil spills out and set fire when it meets with the heat.

A common saucepan can be used to cook rice. But a tightly fitting lid is necessary to cover the pan with the rice. Although you can use a tin foil instead for emergency, but it will burn you if you touch it accidently or don't hold it correctly with some protection. So it is not recommended.

Deep-frying is a cooking method that is used frequently in Chinese cooking. There are many recipes that require doing this. A deep fryer will be needed otherwise you are going to mess things up.

You can give the deepest fryer a shot. But you need to be very careful or have a good skill to contain the spilling oils. An electric wok can also be used for deep frying. Only when you really can't cook rice should you think about buying a rice cooker.

These solutions can be used in emergency or for tests. You can start with them at the beginning. When you are having more and more fun in cooking Chinese recipes, you can think about buying some cookware. Don't spend money on something that is unnecessary. Have fun cooking Chinese dishes.
